Garlic Scape Ideas & Recipes:


Garlic Scape Uses:

  • Add raw to your salad as a substitute for green onions

  • Add chopped bits to your eggs or omelets 

  • Chop and mix in with mashed potatoes

  • Chop down to 2-in lengths and sauté in olive oil or butter over medium heat, adding salt and pepper to taste.

  • Add to your stir-fry dishes

  • Chop or mince into your favorite homemade salsa or bruschetta recipe
  • Puree and add to your marinara sauce for any pasta dish
  • Add as a topping on your homemade pizza
  • Chop in a food processor into small bits and use as seasoning for soups and stews. Put remaining in ice cube trays and freeze for later use
  • Toss with olive oil and salt and pepper and put on the grill.
  • Pickle them!
  • Make garlic scape pesto (see recipe).
  • Make hummus
  • Add to cream cheese or sour cream to make a quick dip/spread
  • Chop and use as a garnish on any dish or soup 
  • Dehydrate and grind down to make garlic scape powder and use as a substitute in any recipe that calls for garlic powder
  • Chopped scapes will freeze or dehydrate nicely!


Garlic Scape Pesto:
1 cup finely chopped (pureed) scapes

1 cup olive oil

1 cup shredded Parmesan cheese
1 Tbs fresh lemon juice

1/8 tsp salt

optional pepper to taste

Blend or send scapes thru your food processor. Blend together scapes, oil, lemon, salt/pepper.

Blend in your cheese and puree well. Freeze or can for preservation.

Here are different ways to use the pesto:

  • Use as is for a cracker spread

  • Use as a spread on sandwiches; also a treat when mixed with mayo/miracle whip
  • Mix with melted butter or olive oil and spread on a French or Itailan loaf to make garlic bread
  • Toss with Pasta or use in your lasagna dish
  • Mix 1tsp in Olive oil and dip fresh bread into
  • Add desired amount into spaghetti sauce for more flavoring
  • Spread on pizza crust and add your toppings
  • Spread on Chicken and grill or bake
  • Mix in with you eggs or wisk into eggs for Quiche


Garlic Scape Hummus:
​2 cans of chick peas (garbanzos) drained
1 cup sesame seeds or Tahiti

2 tablespoons olive oil

1/2 cup lemon juice

1/2 cup fresh chopped garlic scapes

Place the ingredients in a blender on high until a thick paste forms. Salt to taste.
Optional: add your favorite curry, to taste.

White Bean and Garlic Scapes Dip:
1/3 cup scapes

1 Tbs fresh lemon juice

1/2 tsp coarse sea salt

option pepper to taste

1 can cannellini beans, rinsed and drained

1/4 cup olive oil
In food processor blend scapes, lemon and salt/pepper. Add beans and process to rough puree. with motor running add olive oil.

Pulse in 2 or 3 Tbs water, or more, until mixture has consistancy of a dip.
